1 lb. mushrooms
1 onion
3 tblsp. margarine or butter
water salt & pepper
This splendid recipe violates everything you've ever heard about
how to cook mushrooms!
Mince the onion and saute it in margarine or butter over a medium
flame until it is translucent, but not brown.
While the onions are cooking, peel or scrape the mushrooms and cut
them into thin slices. When the onions are ready, add the
mushrooms to the pan, along with "a little bit" of water. Season
it with salt and pepper.
Cover the pan and simmer the mushrooms over a low flame for 30-40
minutes. (Add more water, a tablespoon or two at a time, if the
mixture gets dry.)
Serve as a side dish (with meat) or over toast as an appetizer.
