4 1/2 lbs. ground beef (or mix with ground turkey)
3 carrots, grated or shredded
1 zucchino, grated or shredded
1 medium onion, minced
3 garlic cloves, crushed
2 slices of bread, run briefly under the tap & excess
water squeezed out
2 eggs, beaten
2 cups rolled oats
1 1/2 tsp. salt
3 tsp. sweet paprika
1–2 tsp. oregano
1 tsp. marjoram
1 tsp. cumin
Ground pepper to taste
Ketchup
Note: Spice quantities are approximate. Season to
taste.
Heat the oven to 350º and cover a baking sheet in tin
foil.
Add all the ingredients except the ketchup to a large
bowl. Using your hands, squish and squeeze and smoosh it
all together until it's well mixed.
Mold the meat mixture into a domed log 3–4 inches wide and
high (roughly). You may well have enough meat for two
side-by-side logs.
Cover the meatloaf with tinfoil and bake for 1 hour. Then
remove the foil and cover the top and sides with ketchup.
Bake an additional 15 minutes or so until the glaze is set
and it is beginning to brown slightly.
Remove the meatloaf from the oven, let it rest about 5
minutes to set. Slice it and serve with ketchup.
