2 c. diced, cooked turkey or chicken (steamed, boiled, or
roasted)
1 c. diced celery
1 red onion, diced
3 tblsp. chutney (or a bit more!)
2/3 c. plain yoghurt (with an optional dollop of mayo for
texture)
1 tsp. curry powder (or more to taste)
1 1/2 c. seedless grapes
1/2 c. unsalted peanuts
1 tblsp. lime juice
1/2 tsp. Cayenne pepper
Make the dressing first: mix together the chutney, yoghurt, curry
powder, lime, and cayenne pepper. Let it sit in the fridge a bit.
While the dressing sits, toss together the remaining ingredients.
Stir in the dressing and chill the salad before serving it.
[Note: I often poach a couple of cheap turkey drumsticks
for this recipe—an inexpensive and easy way to get good salad
meat.]
