2 1/2 c. cottage cheese (small curd) or farmer's cheese
2 eggs
3 tblsp. sugar
3/4 c. flour for dough + 1 c. flour (approximately) for dredging
1/2 tsp. baking powder
Butter for frying
Powdered Sugar
Sour cream, jam, and/or applesauce (for serving)
Beat the eggs, then mix in all the other ingredients (except the
additional 1 cup of flour) until well blended.
Spread the additional cup of flour on a plate, heat a griddle, and
put a couple pats of butter on the griddle—medium heat. When the
griddle or pan is hot, drop big, mounded tablespoons of the cheese
batter onto the floured plate, and gently press it into a thick
pancake. Flip it over so that the other side is lightly floured,
then transfer to the griddle. (You may need to replenish the
flour.)
Fry the pancakes until a rich, golden brown, then flip the pancake
and fry the other sides. (You can keep the finished ones in the
oven to stay warm while you finish the batch.) When they're all
done, put on a serving plate and dust with powdered sugar. Serve
with sour cream, jam, and applesauce.
