3 eggs
1 scant c. sugar
6 tblsp. oil
1/3 c. almonds
1 grated lemon rind
1/2 tsp. almond extract (or vanilla)
2 1/2 tsp. baking powder
2 3/4 c. flour (approximately)
Beat the eggs and sugar until light, then mix in the oil, nuts,
rind, and extract. Sift the flour with the baking powder and add
to the mixture.
The dough should be very soft. Turn it out on a well-floured board
and, with flour-coated hands, roll and pat it into two large
loaves about 3" wide and 8 3/4" long.
Bake the loaves at 350º for about 40-50 minutes, then slice and
cool on a rack.
