2 tblsp. butter or ghee (!)
a dash or two of tumeric
1/4 tsp. ground coriander
1/2 tsp. salt
1 10 oz. package of frozen spinach, defrosted and drained
1/3 c. cottage cheese (large curd)
1 tblsp. sour cream
Melt the butter or ghee in a pan, and stir in the spices and salt. Cook over a low heat for two or three minutes until the butter is thoroughly flavored.
Add the spinach and saute for another few minutes until the spinach is hot. Mix together the sour cream and cottage cheese until well blended, then add them to the hot spinach.
Blend thoroughly and serve.
