14.75 oz. can of salmon
1/2 cup matzo meal (breadcrumbs or panko will do as well)
1 egg
1/4 cup chopped onion
1 tblsp. olive oil
Fresh ground pepper
Dill

Dipping Sauce (optional)
Mayonnaise
Sriracha hot sauce


Drain the canned salmon, reserving the liquid

Beat the egg. Then mix together the egg, onion, salmon, and matzo meal (or bread crumbs). If you want them, chuck in a dash of dill and fresh ground pepper too. If the mixture seems very dry, add some or all of the reserved salmon liquid. (I generally use it all.) You want it to be a dough-like texture that can hold its shape (more or less) after they're formed into patties.

Form the mixture into 8 patties. (I guess the previous paragraph sort of gave away that bit.) Heat the olive oil in a heavy pan and gently fry the patties, browning them on each side.

While they're cooking, mix some Sriracha into mayonnaise (to taste) as a dipping sauce on the side.
