2 tblsp. fat
3 lbs. brisket
4 c. boiling water
1 1/2 tsp. salt
1/4 tsp nutmeg
8 carrots (sliced)
4 sweet potatoes (peeled and cut in quarters or thick slices)
1/3 c. brown sugar
Optional: dried prunes, dried apricots, cut-up lemon with peel


Melt the fat in a Dutch oven or casserole and brown the beef. Add the water, salt & pepper, and nutmeg.

Cover the pot and cook for 1 1/2 hours.

Add the carrots, sweet potatoes, and brown sugar (and the optional ingredients, if you opt to use any of 'em). Cover and bake in a 350º oven for 2 hours (remove the cover for the last half hour.)

Serves 6-8
