1/2 lb. butter
1 c. sugar
2 eggs
1+ c. mashed ripe bananas
1 3/4 c. flour
1/2 tsp. salt
2/3 tsp. baking soda
5 tblsp. buttermilk
1 tsp. vanilla

Cream Cheese Frosting
8 oz. cream cheese
6 tblsp. sweet butter
3 c. confectioner's sugar
1 tsp. vanilla
1 1/2—2 medium firm bananas (sliced)
1 1/2 c. chopped walnuts


Preheat oven to 350º. Grease and flour two 9" layer cake pans.

Cream the butter and sugar until light & fluffy. Add the eggs one at a time, beating well after each. Add the mashed bananas and mix thoroughly.

Sift the dry ingredients, then add to the butter/egg mixture. Stir well until flour is incorporated. Add the buttermilk and vanilla, and mix 1 minute

Pour batter into prepared cake pans, and bake 25-30 minutes until a toothpick comes out clean. (Note: You have to insert the toothpick yourself. Don't just hang around waiting for one to come out.) Cool cake in the pans on a rack for 10 minutes, then unmold and cool on a rack for 2 hours.

To assemble: put the filling of your choice between the layers. If you use the cream cheese frosting above—mix all ingredients but banaas and nuts, spread between the layers, and then arrange the slices and sprinkle nuts.

You can either top the cake with more frosting, or dust with confectioner's sugar.
