1 stick butter (1/2 cup)
3/4 cup brown sugar
1 egg
1 c. whole wheat pastry flour
1/2 c. white flour
1 tsp. baking soda
3/4 tsp. salt
2 lrg. mashed bananas
1/4 cup plain yogurt


Preheat oven to 350º.

In a large bowl, beat butter and sugar until light and creamy. Beat in the egg. Mix both flours, baking soda, and salt in smaller bowl. Mash the bananas and yogurt together in yet another bowl.

Add the flour mixture and banana mixture alternately to the wet ingredients. Stir just enough to combine; don’t over mix.

Pour batter into a well oiled 9 x 5 loaf pan or 1 layer round cake pan. Bake 50-60 minutes. Cool for 10 minutes in the pan, turn onto a wire rack.


Optional Chocolate Glaze
2 tblsp. butter
2 squares of baking (unsweetened) chocolate
2 tblsp. hot water, milk, or orange juice
1 c. sifted powder sugar
1/4 tsp. vanilla.

Melt the butter baking chocolate in microwave—don’t over-heat. Stir in the water, milk, or orange juice, powder sugar, and vanilla. Add more liquid to control the consistency.
