1 3/4 c. flour
2 1/2 tsp. baking powder
1/2 tsp. salt
1/3 c. shortening
2/3 c. sugar (or less)
3/4 tsp. grated lemon rind (or juice)
1 to 1 1/4 c. mashed banana
1/2 c. nuts (optional)
Beat the shortening, sugar, and lemon until it is light and fluffy, then add in the eggs and banana.
Sift together the dry ingredients, then mix in the banana-and-shortening mush. Pour the batter into a greased and floured loaf pan.
Bake at 350 degrees for 1 hour.
