2 large apples, coarsely grated
1 scant c. sugar
1 egg
1 tsp. vanilla
4 tblsp. oil
1 c. flour
1 tsp. baking soda
Pinch of salt
1 tsp. cinnamon (optional)
Chopped nuts (optional)

Cover the grated apples with the sugar and let it stand for a while. Add the beaten egg and oil.

Sift the dry ingredients, and add to the apple mixture. (You can add nuts too, if you want.)

Put the mixture in a greased, 8" pan and bake at 350º for 50 minutes.
