4 oz. butter
3 eggs
1 c. flour
1 c. milk
1 tsp. salt
1 tsp. baking powder
1 lb. Monterrey Jack cheese, grated
4 c. chopped, fresh spinach
Melt the butter in a 9 x 13" pan.
In a separate bowl, beat the eggs. Then add the flour, milk, salt,
and baking powder. After mixing, add, the cheese and spinach, and
mix well.
Spread the whole greenish mess into the buttery pan and bake at
350 degrees for 35 minutes.
Cool for 30 minutes before cutting it into squares (about 40) and
serving.
Leftovers freeze well. (More to the point, they defrost well.)
